Crockpot Mac and Cheese

Instructions

  1. Cook the macaroni
    Boil pasta according to package instructions, stopping just before al dente. It will finish cooking in the crockpot. Drain and set aside.

  2. Make the roux
    In a bowl, whisk together melted butter and flour until smooth and lump-free.

  3. Mix with milk
    Pour milk into the crockpot. Slowly whisk in the butter–flour mixture to create a creamy base.

  4. Combine all ingredients
    Add cooked macaroni, cheddar, mozzarella, salt, pepper, garlic powder, onion powder, and paprika. Stir until evenly combined.

  5. Cook on low
    Cover and cook on low for 2 hours, stirring occasionally to prevent sticking.

  6. Check consistency

    • Too thick: stir in a little extra milk

    • Too thin: cook uncovered for 15–30 minutes

  7. Final seasoning
    Taste and adjust salt or pepper as needed.

  8. Keep warm
    Switch the crockpot to “warm” until ready to serve.

  9. Serve and enjoy
    Serve as a main dish or hearty side. Optional toppings include chopped herbs, breadcrumbs, or extra cheese.

Tip

For a golden crust, transfer mac and cheese to an oven-safe dish, top with cheese or breadcrumbs, and broil for a few minutes before serving.
